Abstract : Milk proteins have been studied extensively for several years. In recent decades, technological breakthroughs have allowed us to gain a better grasp of this complicated protein system. Proteomics and related developments make it possible to learn more about milk proteins. Milk proteins can be detected, identified, and characterized using proteomics. The first section of this report includes an overview of the primary techniques utilised in proteomic methodology. We examine current proteomics applications to milk proteins in the second section. Finally, we highlight the value of gel electrophoresis (two-dimensional) in conjunction with numerous mass spectrometry methods for the accurate characterization of milk proteins.
